German Potato Salad
4 #s red potatoes
1# bacon fried and crumbled – reserve ½ cup of bacon fat
½ cup sugar
4 tablespoons flour
2 teaspoons salt
2 teaspoons celery seed
2 teaspoons dill seed
1 teaspoon black pepper
1 cup cider vinegar
1 cup water
One large onion diced
1 cup shredded lettuce
Parsley
Cook potatoes until tender, cool, peel and slice into ¼” slices
Fry onion until slightly softened
Fry bacon over medium heat so as not to burn drippings
Blend sugar, flour, celery seed, dill seed and black pepper in a small bowl
Put reserved bacon fat back into fry pan – add vinegar and water – bring to a boil
Slowly whisk in flour sugar mixture stirring to break up lumps. Boil 2-3 minutes until thickened. Remove from heat.
Add potatoes, bacon, onion and lettuce to a large casserole dish. Pour dressing over them and lightly toss to coat. Garnish with fresh parsley. Cover and place in a 200 degree oven for approximately 1 hour. Serve warm.
An old family recipe which is great with ribs.
