Perdue Oven Roaster suggestions

I had planned on grilling 2 fryers for dinner tonight- chicken under a brick - but my wife mistakenly picked up an oven roaster instead. Any suggestions/recipes for cooking a roaster on the grill or WSM?

Thanks,

John

John,

You can do many things with chicken. A roaster, being larger than a fryer, is many times left whole and roasted (thus the name). However it can be cut into pieces or butterflied. Chicken is so neutral, that it can be used with many different seasonings. You may consider brining it regardless of which route you take. I enjoy a good roasted whole chicken using simple herbs or a marinated bird that has been butterflied and grilled. If roasting, I'd recommend a higher temp (350ish) to help crisp the skin. You might consider going through the Poultry recipe section for specific recipes or to give you more ideas.
