Venison Sausage Fatty

I tried my hand at smoking a couple venison fattys on the Performer this past Sunday. Try to ignore the sad state of my grill - I have it on good authority there'll be a new grill brush in my stocking on Christmas day. Here they are: one is stuffed with Scallions, Spinach and shredded mozzarella and cheddar cheeses; the other has Scallions, Jalapenos and shredded Pepper Jack.

Halfway there, they were looking pretty good. I battled the wind and temperature spikes throughout the cook.

I learned quite a bit from this first effort. A couple temperature flares resulted in the bacon being overcooked but the fatty itself was delicious. Thanks for looking. :cool:
 
Looks great! Since I don't hunt &/or have friends that do - we never have venison.
My fatties are plain old Jimmy Dean. I'm sure those tasted insanely good.
 
Looks great! a nice way to use up some deer meat!

Your grill looks fine, seasoning is never a problem!
 
Thanks for the encouraging words, guys. Next time I do these I'll use pork sausage and experiment with some different cheeses. The venison sausage was good, but it could have used a bit more fat mixed in.
