Teriyaki bone in chicken thighs


 
I just love the color on those thighs, Brett!! I'm sure that was good eating! May just have to fix up something similar for family dinner this weekend!

Note, a chunk of CA white oak was used to aid in coloring the chicken. The oak added a mellow wood flavor, basically enhancing the JD lump. More perfumed than a heavy smoke flavor. The nose that would attract you to any roadside bbq joint when driving.

The recipe calls for dark soy sauce. I used a Kimlan brand aged one. Next time I’ll do a blend of dark and aged. The chicken will pick up more of that salty umami flavor.

On the ginger and garlic, go big. I ran both through the food processor, a lot of bit, and then added some of the pineapple juice to the processor to further blend down both ingredients. They were very fine bits when done which really helped them cling to the chicken and then concentrate on the sauce boil down.

These were very good. Easily a crowd pleaser. And this marinade would make for really good boneless and skinless thighs on sticks if you’re serving a large group.

Paired with rice, green onions, marinated cucumbers, some chunky avo and even sautéed mushrooms, this meal can go far. Enjoy!

That looks superb Brett, like said above perfect color and I'm sure taste. We make a lot of teriyaki cooks in the summer. Teriyaki and chicken go together like peanut butter and jelly, also love teriyaki burgers.
Never made homemade teriyaki got to see if I can find a few recipes to try for fun.

I used to use this for small stuff but my workbowl is broken and I’ve been hanging onto the motor, praying I’ll find a bowl. I used it to make all my kid’s baby food eons ago. And it was great for small prep.

I can see getting another small one if I can’t find a workbowl. Or I’ll just use the 14 cup in protest of buying and owning more stuff.

Usually I’ll just run my knifes and hand chop stuff. I did buy a stick blender that I’ve really come to enjoy using. It too can do these small chop jobs and is simple to clean up.

Interesting Brett, Barb has the same one in white. She's had it for over 40 years and it still get used a lot and works great.

We also have that same one and we bought it last century and still use it on big jobs egg rolls, and other things. But her wrists are giving her a hard time so about 10 years ago she bought this small for things like garlic and ginger chops so it is easier on her plus the fast easy cleanup.
