Sunday night leftover brisket + torts

Had some leftover corn tortillas and brisket flat. Gently warmed the brisket in the microwave. Brushed the torts very lightly on both sides with oil and browned first side in hot skillet. Flipped the tort, brushed half with warm Texas-style BBQ sauce. Placed brisket on sauce, added grated cheese. Covered until melty. Add any additional toppings and you've got some good eats.

I'm scared to smoke a full size brisket. The last two I smoked (small cuts) came out dry and tough.

I'm scared of brisket, too. You'd be stupid not to be, as it takes a lot of practice to get right. I will never cook enough brisket to say that I've mastered the process. :)
 
As Steve Raichlen says, brisket is the "Mount Everest" of bbq. Intimidating, yes...but if you can master it, you'll feel like you own the world, bbq-wise.
