Sunday Brisket Flat

Kim was running errands near costco on Saturday so I asked her to go in and pick me up a brisket. We haven't had brisket since smoke day and it sounded really good. She ended up finding this very nice 7 lb. flat which I applied rub to this morning. Decided to cook it on the kettle since it uses so much less charcoal.

Set up the fire for a long, slow cook.

After fire got going put the brisket on.

No peek for three hours then turned the meat.

At the six hour mark I reached for the crutch and foiled the brisket. Also refreshed to charcoal a bit.

After about eight and a half hours pulled the brisket to rest for an hour.

Kim made macaroni salad which is not my fave but she loves it.

After an hour of rest sliced the brisket.

Kim says she is "off bread" for awhile so we served the brisket as is.

The brisket was really good. I even tried Kim's macaroni salad which really was good. We love brisket and it was a great meal. Thanks for looking and everyone have a great week!
 
Fantastic Brisket Robert. You are the master with the kettle, looks amazing. Kim's mac salad looks excellent but I think she forgot the sweet pickles :)
