Stuffed Boneless Chicken

I want to thank Mildo for the inspiration of this cook after reading his post Here: https://tvwbb.com/showthread.php?75135-Stuffed-Boneless-Chickens.

After watching Jacques Pepin's lesson on de-boning a chicken on Youtube, I decided to give it a try and just keep the stuffing simple. I stuffed the chicken with Pepperidge Farm Herb Seasoned Stuffing.
I set up the grill for indirect and cooked it at 400 for 45-50 minutes, with an internal temp of 165. The wife and I both enjoyed this cook and it was something new and different for us.

I love watching Jacques Pepin bone out a chicken! I need to practice, I have done it but, not in a long time!
That looks delightful by the way!!!
 
Great looking bird. What was in the foil?

Its the Chicken Heart, Liver, Gizzard and Wings with some seasoning and butter. Nothing goes to waste at our house. I even made stock with the chicken bones!
