Spinach Stuffed Pork Loin

Feeling better,I decided to butterfly and stuff a pork loin. Hadn't made it in a while,and it turned out awesome!
Started out with a 2 3/4 pound pork loin.

I thought I took a picture of the thing rolled out,but I musta not. :(
Seasoned with salt,pepper,garlic and onion powders and stuffed with fresh spinach and feta. Pammi got me these silicon bands that make for a quick and very easy reroll!

Indirect on the kettle using some of the RO briqs I got on clearance. Glad I got 'em too! They are under my lifting restrictions! ;)

I did dessert too! Banana boats with chocolate chips and marshmallows! Indirect for about 10 minutes. These things were better than I thought they'd be! And the grand kids were licking their plates wanting more! This ones a keeper too!

Looks like its cooked to perfection! And that Banana looks awesome...Something i will do for my kids next meal. A solid one mate
 
Great cook Phil, thanks for the banana boat idea, we have some in the back yard that are just about ripe, what did you do, slice the nanner, add chocolate syrup and mini marshmallows and wrap with foil or leave the foil open at the top? and that broken link, ...curious minds want to know, what is the small block Chevy motor tailgate stile???

Count me as another who did the boats and had them be way better than anticipated. That is definitely a winner of a recipe.
 
@Karl,slice the bananas almost through. Add chocolate chips or broken up chocolate candy bars and marshmallow. Wrap in foil,but leave the top open. Cook indirect 8-10 minutes. Enjoy! Next time,we need some graham cracker crumbs for crunch.
And the pic from the bad link is just another shot if the loin tied up. Full frontal,even! :D
 
@Paulie,I just added some tomatoes,oregano and chives from our garden and just a few chopped black olives and some feta cheese. Seasoned with S & P and then stirred in some balsamic vinegar. A fan favorite and very yummy!
