Ribs and Wings on the grill

I am breaking in Chester with an afternoon Ribs and Wings. (Chester like in COPPERpot).

Had the afternoon off, and got the ribs on with a version of the Memphis Dust around 430pm. I have been keeping the Dome thermo at around 275-300, but no sure how accurate it is.

The wings went on after 2 hours. Here are a couple of progress pix.

Was the first run w/ the Kettle, getting a feel for the girl. The lid temp was around 275, but it felt like she was cooking much closer to 235ish. No complaints here at all, the temp control is GREAT on that thing. Next run im going to put a probe on the grill and get a baseline for temp vs the dome.

Very happy with it so far and the ribs came out GOOOOOD.
