Well 2nd attempt at ribs on my 18.5 WSM

2 Pork Spare Ribs

Rib #1:
Chris Lilly's Pork Butt Recipe
1/4 cup dark brown sugar
1/2 cup white sugar
1/2 cup paprika
1/3 cup garlic salt
1/3 cup kosher salt
1 tablespoon chili powder
1 teaspoon oregano leaves
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper

Rib #2
Aaron Franklin Pork Rib
1/4 cup Kosher Salt
1/2 cup Freshly Coarse Ground Black Pepper
2 Tbsp. Sweet Paprika
1 tsp. Onion Powder
1 tsp. Garlic Powder

Place each rub in a container and apply to liking. I used olive oil for the rub to stick

Cooking Method:
Wood: Hickory with majority Apple
Temp: 265-275
Smoke Time: ~4 hours

First 2 hour: Smoke with rub (Used olive oil to have rub stick)

After first 2 hours spritz water and apply choice bbq sauce on ribs close lid for ~15 mins
Next 1.5 hours Texas Crutch the ribs (Aaron Franklin says to do 2 hours but my smoker was very sporadic with the temps)
Last .5 hours spritz and lay sauce

Take off smoker then wrapped and placed in cooler
