Last week I was at the asian market when I noticed they had pork belly on sale. I picked up a 2 lb piece and cured it using Bobs recipe. For smoke I used cherry.

I used my kettle and cooked the pork at around 200 till the meat read 150.

Fried up some end pieces and made a bacon cheeseburger.

Don't know if I'll ever buy grocery store bacon again. This stuff is meatier and just overall better tasting. One of the best burgers I've had in a while.
 
Looks good!!!

I just picked up about 6 lbs. of belly last night, makes a nice Christmas gift for close friends instead of a plate of cookies. You are right, it is a different thing altogether than grocery store bacon.
 
Great looking slab. Looks like it got great use right away. Nice looking burger all dressed up.
