Well, I did it. I fired up my WSM in spite of the ominous weather forecasts. Yes, the skies opened up as they often do at this time of year in my region. Did that stop me? Absotively posilutely not. I watched the Maverick slowly ratchet down during the rain, only to ratchet back up once the rain stopped.
Baby back ribs, using the 2-1-1 method, tweaked during the wrapped phase with a little brown sugar and apple juice (on mine), finished with Publix Honey BBQ Sauce. A little tug, ok for me; but, The Boss wants fall-off-the-bone. So let it be written. So let it be done.
