First Effort Smoked Sausage

I made a version of Texas Hill Country style sausage.
I ground up some pork butt and chuck roast


Cured overnight in the fridge, stuffed and hund to dry for a bit




Smoked them over oak wood.


They turned out pretty good and I was pleased for a first effort.
 
Those look good! How spicy did you make them? You should post a shot of one that's been sliced...;)
 
Thanks Dustin. I think they could have used a bit more fat but the flavor was spot on what I was looking for. They did have a little heat Brad but not over the top. The dark color came from the paprika and from a long slow smoke. They smoked for about 10 hours.
 
Looks like you nailed the sausage. Have the last of my elk meat waiting for me to make some sausage.
