First, I went to the meat room today for my smoke day Butts.
Last time I showed you the Pork side. This is the Beef side.
This is a shot from end to end.
The guy who looks mesmerized by the meat, is actually an employee doing inventory. Those are my Butts, front on the right. There are cases of everything under the tables, you get a by the case discount of a few cents. Depends on the sale.
My haul!
The Lamb was on sale for $4.55 a pound , so I had no choice. It isn't for smoke day, but I'll find a use for it.
OK, now the chicken. Simple rubbed with fresh garlic, EVOO, and Pappa Jakes.
Get some char on it!

Finished.Sorry no good plated pictures. I like the dark color! Skin was nice and crispy.
