Mexican Roadside Chicken
begin with marinating the bird in more Goya Picante Mojo for about 8 hours, then start marinatin' the cook

this Mexican treat is perfectly lovely.... if you find it, buy it!
we then took Bryan's Roadside recipe and spiked it with south of our border delights...
a little bit of this ▼ and a little bit of that ▼ with lots of this ▼ and lots more of that ▼

basted the spatchcocked bird every 10 minutes while it sat high above the hot fire in the WSM

and while that cooked, diced up some poblano peppers & long sweet red peppers with a sweet onion

sauté all that goodness together....

mix those veggies with some rice, add some tomatoes and green chilies....

.....then start marinatin' the cook ( with a few shots of tequila)

The only thing missing is Maribel and Me drinking a few shots and eating some pollo!!
