Beer Stuffed Mushrooms

It was another beautiful day so cooking outside was on the lunch menu. So SWMBO prepared a stuffing: chopped mushroom stems, shallots, spinach, garlic, salt, pepper, thyme, bread crumbs, homebrewed brown ale, and shredded parmesan cheese sautéed and spooned it into some capped 'shrooms.



I placed them on a steaming screen and cooked indirect until slightly browned.

add some grapes, cheese, prosciutto, and crackers and lunch is served.

Dwain, that is exactly how I'd like to do lunch daily... Great stffed shrooms and love all the other items. Can imagine eating that meal out on the deckin the warm southern sunshine any day!
