    Trial run Texas BBQ Rub #1 - How much to use?

    Dang you people! I've been using the #1 rub & really like it. I'm using it on 2 butts for an overnighter tonight. After reading all of your comments about the #2, now I HAVE to order some of it too. I'm blaming you when the box arrives & my wife asks me why I need more BBQ stuff.

    I bet they turn out fine. Be sure to let us know the results. Who knows, maybe this will be your best cook yet & you'll be trying to recreate the temporary high temps again in the future.

    Buying Charcoal in Bulk

    The past 2 years, Home Depot has sometimes had big sales on their 2-24 lb packs. The sales are usually around 3 day holiday weekends during grilling season. I bought a bunch at ~$7.99 per 2 pack last year.

    I agree with Paul G's suggestion of making ribs. I did the BRITU recipe on TVWB for my first cook. My ribs have improved a lot since then, but they were still better than any we'd had at a restaurant.

    Favorite Sauce for Ribs.

    I like mixing 1/2 Sweet Baby Ray's & 1/2 Hot Bone Suckin' Sauce. My family loves it. Someone here on TVWB originally told me about this. I get the Bone Suckin' Sauce at Cracker Barrel.

    Louie, I've seen those disposable grates at Walmart & thought they would work great for meatloaf. BTW, it looks like one of the meatballs was trying to escape.

    Maverick et-73 updates

    I'm pretty sure that the ET-73 only updates when there's a temperature change. Mine has stayed at one temp for at least 15 minutes, only to update later when the temperature changed.

    Great picture! I keep my WSM outside all winter too. I do put a large plastic garbage bag on the cooker before adding the cover to keep the moisture out.

    Sam's Club or Costco? Which has the better meat prices and quality?

    They both have their good points. I like Costco's ribs better. Sams' Club has bone-in butts (which I like) instead of the boneless butts at Costco. My local Costco doesn't have brisket & Sam's has choice grade flats & packers. I have memberships to both.
