    Transporting 14.5" WSM

Greetings from the heartland. I've been a WSM owner for many years, starting with a 18.5, upgrading to a 22" (later wishing I had stayed with the 18.5), and then adding a 14.5" to go along with the big boy. I bought the 14.5" for taking camping or family events or for small cooks at home. To...

Curing bacon question - piercing the meat

Ok. Lesson learned :-) The last time I didn't poke the holes either. I don't know what came over me today. Now I'm worried it may sit too long in the cure before I can smoke it. The good news, at least, is that I can get fresh pork belly easily in Columbus so I can do-over if needed. Thanks!

Curing bacon question - piercing the meat

I just put 18 pounds of belly in the fridge to cure for 7-10 days using the cure in "Mastering the Craft of Smoking Food" by Warren R. Anderson. This isn't my first time making bacon, but it is the first time I got the idea to use my bear claws and make a lot of piercings in the meat. I figured...

    Meat slicer recommendation

Another question for you. The width of the pork belly is wider than the width of the carriage. Is there a safe way to use the Cabela's slicer for bacon? Their 12" slicer has the same issue so short of buying a commercial slicer, I'm not sure what to do. Any tips would be appreciated. Thanks!

    Wind shield

I have used mine in very low temps (0F and below). The insulation qualities are very good. You will get condensation that will freeze on the ground around the WSM but that's hardly the jacket's fault :-)

    Meat slicer recommendation

Hello all! I am in the market for a meat slicer that will be used for all manner of items (veggies, hams, turkey breasts, bacon, etc) but the primary purchase driver is slicing homemade bacon. Does anyone have experience with either of these two models and could you make a recommendation for one...

WSM SmokeR Jacket from BBQ Guru

I've had a smoking jacket from BBQ Guru for over 10 years. I had the original nomex one for my 18" then a silicon one for my 22.5" Sadly, they don't make one for the 14.5". While not the cheapest, it's the easiest and probably overall best performing wind break plus insulator you can get. And...

    WSM Jacket

I've had one for my 18" and 22" WSM. It's a required purchase as far as I'm concerned in cold, windy environments.

    Rib Racks

A long time ago I bought a pair of rib racks from William-Sonoma that were pretty nice. I've no idea what I've done with them. I'd like to get two rib racks for my 22" WSM. What are the current recommendations for good rib racks these days? Thanks!

    DigiQ II WSM Mount

Russel, Yes it did, but there's no way to use the universal mounting adapter (the flat piece of stainless steel) to mount to the fan. Well, no way short of modifying things. Oh well, no biggie. Thanks for trying all.

    DigiQ II WSM Mount

Chuck, I have that adapter to mount the fan to the WSM. I'm asking about mounting the controller to the fan like my old Competitor model. Apparently people just don't bother to do that

18 or 22...that is the question.

I've had both. The 18" is plenty for home cooking but if you want to have a large gathering, you'll be happy you sprang for the 22".

    DigiQ II WSM Mount

I saw one post about doing this, but it wasn't terribly clear. I decided to upgrade from my trusty old BBQ Guru Competitor (original model!) to a new DigiQ II. My old Competitor mounted to the 10 CFM I upgraded to but I don't see any way to mount the DigiQ II to the fan or WSM w/o some sort of...

    am i a lazy american?

It's not lazy. It's called working smart. I use the side burner on my Genesis or my Camp Chef Stove to light my chimneys. I use whatever is closer at the time.It also has the advantage of lighting the charcoal quicker than a cube or paper, especially if you're in a real hurry (because you had...

    22.5 jacket

I got an email from them a month ago saying it was in production and to check back soon. I've been asking since December. Now that Spring is almost upon us I probably won't bother checking on the status anymore until next Fall.

    New 22" BBQ Guru Jacket

Anyone heard any updates? 2 weeks has come and gone (twice). Come on Guru guys. I'm ready to pull the trigger on a Jacket and Digi-Q II for my 22" WSM

Tried using Reflectix Insulation on 22" WSM - FAIL

Ron, That's what I usually do but I thought I'd be "clever" this last time. I should have known me better Hopefully the smoking jacket will be available soon. I don't have the time to make my own.

Tried using Reflectix Insulation on 22" WSM - FAIL

It was 3 degrees (F) this morning when I went out to put two pork butts on for a high heat smoke. I wanted to run between 325-350 with an old, original BBQ Guru Competitor with 4cfm fan. I have a new 22" WSM. Since the BBQ Guru folks do not (yet) have a Silver Bullet Smoking Jacket for the 22...
