Another question for you. The width of the pork belly is wider than the width of the carriage. Is there a safe way to use the Cabela's slicer for bacon? Their 12" slicer has the same issue so short of buying a commercial slicer, I'm not sure what to do. Any tips would be appreciated. Thanks!

I have used mine in very low temps (0F and below). The insulation qualities are very good. You will get condensation that will freeze on the ground around the WSM but that's hardly the jacket's fault :-)

A long time ago I bought a pair of rib racks from William-Sonoma that were pretty nice. I've no idea what I've done with them. I'd like to get two rib racks for my 22" WSM. What are the current recommendations for good rib racks these days? Thanks!

Russel, Yes it did, but there's no way to use the universal mounting adapter (the flat piece of stainless steel) to mount to the fan. Well, no way short of modifying things. Oh well, no biggie. Thanks for trying all.

Chuck, I have that adapter to mount the fan to the WSM. I'm asking about mounting the controller to the fan like my old Competitor model. Apparently people just don't bother to do that

I've had both. The 18" is plenty for home cooking but if you want to have a large gathering, you'll be happy you sprang for the 22".
