Sear first and brought to internal temp slowly. Reverse sear is good but it is much easier to bring to the right internal temp slowly for me.

My wife and I kind of stumbled into being in the business of being a reseller of commercial sauces and rubs. Six years after coming up with a seasoning we called Tatonka Dust there was a changed in an ingredient for mixing it and we had our facility and website set up to take on other products...
Wings and drummies seasoned all with Dirty Bird Hot rub and a chunk of apple over the Vortex for smoke, -14F windchill and just under an hour had nice color and crispy.
