This is my "Z's Steak and Brisket Rub #3", as in it is my 3rd attempt. I was originally trying to replicate "Montreal Steak Rub". But it took a turn to the left and then 100 yards down the road. This one came out good enough to where I like it. It is somewhat spicy but not over the top.
2 tablespoons kosher salt
1 tablespoon fresh ground peppercorn blend
1 tablespoon dehydrated onion
1 tablespoon ground red pepper
1/2 tablespoon dill seed
1/2 tablespoon celery seed
1 tablespoon cayenne pepper
1 tablespoon of roasted garlic.
This is how I make my roasted garlic. I take about 10 garlic cloves, peel and chop them. Spray a pie pan with olive oil and put the garlic slices in. Spray the garlic slices with olive oil and salt. Bake in the oven @ 225. It takes about 35-50 minutes to turn it golden brown(and makes the house smell awesome!). I will chop it a little finer then put it in a pepper mill. Grind the heck out of it and there you go.
