Yukon Gold Chips..Baked in Olive Oil

Yukon Gold Chips

Preheat oven to 400-425
Wash, dry and, Slice potatoes 1/8-3/16's thin
Cover cookie sheet with a sheet of parchment paper
Spray paper with olive oil
Lay a layer of sliced potatoes slightly overlapping
Spray potatoes with olive oil
Bake 20 minutes or till slightly brown-crisp
Sprinkle with Doll's Rub, Christmas Rub or Old Bay

In 30 minutes you have a treat!
 
There are many references to Russet potatoes in chips...I have not read that they are The potato.
Many potaoes and vegies are chipped...sweet potato, carrots....

Upon further reading...it must be Russet by default.
