Try:
2 T granulated onion
1 T ground ancho chile (or sub paprika)
2 t granulated garlic
2 t rubbed sage
1 t thyme (grind well with a mortar, machine, or do the best you can with your fingers)
1 t ground powdered lemon zest
1 t ground black pepper
1/2 t ground bay leaf
1/4 t cinnamon
1/4 t ground ginger
heat--cayenne or another--to taste
tiny pinch salt (I'm assuming you're brining)
