Why the long cook time?


 
I went for my first long cook this past Friday and did a ~7lb pork butt. I built the heatermeter hoping I could do the 'set it and forget it' thing and enjoy some happy sleep while the smoker is going..After some learning and tweaking it seems like I'm close. I didn't have any alarms over night so great! However..see this cook. It seems like this should have been done in 14-15 hours. I have my TC on the grate and I have previously calibrated both it and the probe in boiling water. Also I know the lid thermometers are junk but it is always reading about 25 degrees higher than my grate temp which seems normal.. so I don't have any reason to believe my temps are too low. This cook was going on 20 hours and I had to finish off in the oven.
8:00am I stuck it in a pan with a little cherry dr. pepper and covered the pan with foil and that dropped my temp a bit.
Any other lid opens were me adding charcoal. I didn't mess with it much I just let it do its thing.
