I've had a 13 lb select brisket in the freezer for awhile. We have some friends coming over tomorrow for burgers, which I am going to make from it since I need to try out the grinding attachment for my Kitchen Aid.
Today I had a long run in the morning heat (15 miles and change), then spent four hours out in the sun with the kids at a water park. I decided that I wanted some chile colorado since I was completely starved. I cut out the middle third of the brisket, trimmed the external fat and cubed it for the chile. I expected it to come out tough or may just a little chewy, but it was surprisingly tender and tasted awesome.
What are some non-traditional things that you use brisket to make? Other than regular smoked brisket or pastrami I had never made anything else with it until today. I've used leftover brisket for chili, Brunswick stew, etc but never an uncooked one.
