White stuff on gas grill (mold?)

I just got a new Weber E-425 gas grill with the porcelain enameled cast iron grates, and I'm finding that a few days after grilling I start seeing a white substance on the grills and along the inside walls. Is this white mold, ash, oxidation of some sort, or something else? It's not fuzzy, it's more hard and crusty like, almost like a salty residue. I've been storing the grill with a cover on, but I tried one week without a cover and saw the same thing. It's not especially humid where I am (Austin TX). I have a Weber smoker that I also keep covered, and I've never had an issue with white stuff like this.

I mostly just want to make sure I don't have a mold issue, although it seems the consensus solution for that is to just burn it off :)

That is mold. Harmful? IDK but I've seen it before. It can vary from a white(ish) look to sort of a greenish "flaky" look. Don't worry it adds flavor :D
