Daniel: You can do like Coopers and other BBQ restaurants in central Texas do. They burn mesquite logs or oak, overnight, then shovel the coals into your grill or smoker. Not a lot different than cooking with charcoal. If your place is in the brush country, I am sure you have lots of mesquite to burn, so waste is not an issue. I would suggest that you stay away from green mesquite. If you do not have one, get a discada and use the coals for fuel. Or if you have a dutch oven, use the same coals to cook pan de campo.
