Any of you guys use wood to cook on your webers? If so how is it, i got a bunch of mesquite trees me and some buddies are gonna cut down at my ranch to use in the fire pit and such.

i've done it.

it takes a while to burn down to embers, and it doesn't burn as hot as charcoal

but the flavor is great.

Eventually I'd like to do a full smoke using nothing but real wood - but that can wait a few years.

Daniel: You can do like Coopers and other BBQ restaurants in central Texas do. They burn mesquite logs or oak, overnight, then shovel the coals into your grill or smoker. Not a lot different than cooking with charcoal. If your place is in the brush country, I am sure you have lots of mesquite to burn, so waste is not an issue. I would suggest that you stay away from green mesquite. If you do not have one, get a discada and use the coals for fuel. Or if you have a dutch oven, use the same coals to cook pan de campo. Buena Suerte.

I have a Kettle Pizza insert coming for my Weber OTG grill. They recommend using wood on top of charcoal in a two zone fire to make wood-oven style pizzas.

I would probably use a similar approach if I had mesquite to play with, even if I wasn't doing pizza. We have Acacia here which is similar to mesquite but without quite so much bite. I am hunting that for doing my pizzas and using with my Smokenator 1000 add-on for the Weber grill.
