i did my 2nd cook with the big clay pot in place of the super deep current weber pan. i am happy to report that i am not experiencing any flame-outs on my burner (afterburner conversion here).
when i did babyback ribs the last time on the weber and afterburner, it took 5 hours to fully cook and reach 170+. this time, i preheated the smoker for about 15 minutes or so. i was doing 3 slabs and wanted to put all them of them on the top rack so i used the method of getting another top rack and putting the second one upside down. worked perfectly, i got the second one from my pro-q. i got a 5 rib rack but wanted to try another way.
i put them on the smoker and set the temp to about 210-250. it took me about 20 minutes to find that special regulator adjustment to get it to 230. (the smallest change changes the temp quite a bit, and its barely even opened) i watched my maverick thermo quickly get to 100 and so on at the ribs and the second therm steady at 230.
i did my first peak at 2hrs and they looked great and the temperature was already past 150. 1/2 hour later the thing was beeping because it already reached 170. i thought maybe i was hitting the bone so i left them on for another 20 minutes. i went out there with my other little therm and the ribs were at 180.
so less three hours i had baby back ribs done and done perfectly. is this another plus for using a clay saucer?
