Turkey Temps WSM 22

Hi All I was going to use my rotisserie to cook my 13 lb turkey @ 350 *either on Saturday or Sunday. Here is my problem my Fireboard drive /fan cable crapped out on me. IF I want to use my WSM 22 , I'm going to have to revert back to OLD school way. Just using the vents..Any tips or tricks maintaining 350* in my 22. I was going to use lump but I might be better off, using charcoal. I'm looking at 5 hrs cooking time.

Check out the thread below.


Make sure to start with an empty foiled water pan, don't be afraid to have to prop the door open, and I went for it and took out the water pan all together and cooked right at 245 on my WSM 14 with a foil pan on the lower rack. Don't be afraid to add more lite charcoal during the cook. And don't fret if it is a little lower in temp, guys have been sharing some great birds cooked at 295 ish also.
 
Hi I have no trouble getting my 22 to 350*, at times it goes higher then that.

Hi All You can see here how the temps got away.Happens all the time with the rotisserie.

I don't have a rotisserie but maybe your ring has slight gaps that feed the fire.
i've seen some fashion gaskets out of aluminum foil to plug up the gaps.
 
13 lb turkey @ 350 for 5 hours seems like more time than needed. I cooked a 14 lb. turkey at temps from about 290-350 for 4 hours on WSM 18 and it was plenty done.

So did you go forward with this last weekend? How did it turn out?
 
Skin looks burnt, but tasted good. 350* was the temp on the turkey directions.Temps got away from so I had to finish in the oven.
