Turkey noodle soup

Did a low & slow turkey cook last week and I had some leftovers. I decided to do a quick and easy turkey noodle soup.

I cut off the majority of the meat from the carcass and reserved it. Then, I cleaned out the cavity that still held the carrot, celery and onion. These veggies were cooked and seasoned with the same turkey rub, so they were already tasting pretty good.

Brought the water up to a boil and tossed in the carcass, one wing and one leg (the others were eaten

Boiled for about an hour. Tasted for any seasoning adjustments. Then added the veggies, reserved juice (which had jelled) and chopped turkey meat. Cooked that about 20 mins and then added noodles. The rub from the veggies and what was left on the carcass provided most of the salt and pepper needed. If needed you could add sage, thyme, etc.

Noodles were done in about 10 mins. The soup came out great; a nice roasty flavor with hints of smokiness. Very easy to do and great for leftovers.
