I've been advocating 275F, 2 1/2, 1 1/2.
I did these at 250F, 3, 2, 1 (3 hrs uncovered, 2 hrs foiled and 1 hr glazed).
They were fall off the bone tender and really moist, in my WSM with a foiled clay flower pot base in a foiled water pan.
Sorry comp cooks, my wifey loved them! So did I!
There is, indeed, more than one way to skin a cat.
