Recipe modified from one supplied by Weber with their grills.
Thicker Bar-B-Que Sauce
2 tbs butter
4 cloves minced garlic
½ cup finely chopped onion
½ cup finely chopped green pepper
½ cup finely chopped celery
½ tsp oregano
½ tsp dried basil (or 2-3 tbs chopped fresh basil if available)
½ tsp cinnamon
1 tsp salt
juice from 1 lemon (reserve shell)
¼ tsp hot sauce
1 ½ tbs Worcestershire sauce
1 ½ tbs “liquid smoke”
2 cups catsup
1 cup water
½ cup cider vinegar
Heat butter in saucepan – add garlic, onion, green pepper, and celery and cook over medium heat about 5 minutes.
Add seasonings and cook another 3-4 minutes.
Add lemon juice, reserved lemon shell, and remaining ingredients.
Simmer 30 minutes – stirring occasionally.
Makes about 5 cups – freezes very well.
