the perfect chourico - Smoker temperature control

I like chourico and smoked to perfection. But for that I am looking to build a PID based controller to control my smoking time and temperature.
This is what I have in mind.
Smoke for 2.5 to 3 hours below 100 deg F.
Raise smoker air temp. to 160 Deg F and maintain until chourico internal temp reaches 152 deg F.
I am a little confused on how to do this do i need one PID with three inputs or three PIDS with single inputs.
I need all the help I can get please
