I love the fat on that chop, Peter! Do you know what breed of pig it came from?

I was told they are Berkshire boars mated to Hampshire/Yorkshire sows.

Thanks for the comments. I have a smaller chop for my wife and a NY Strip for me ready to go tonight. I also picked up some pork belly and Italian sausage.
