Texas Roadhouse imposter green beans.

2 Lbs fresh green beans
1 Lb bacon diced
2 c water
1 Tbsp sugar
1/2 tsp freshly ground black pepper
1 lg onion thinly sliced
Brown the bacon till crisp. Add the onion and cook till caramelized.
Drain as much fat off as you like, mix the sugar, pepper with the water till well incorporated.
Add that to the bacon,onion mixture and bring to a boil, all the while scrapping the bottom of the pan with a wooden spoon.
Add the green beans, and simmer for a few hrs uncovered.

This looks pretty good just one question when adding the beans are you really simmering for a few hours? Seems to me you would want to simmer until beams are just starting to soften but still snap....
 
I go a few hrs and the beans still have some bite. You could certainly cut the time as you see fit.
I've only been to the restaurant once, and everyone said try the beans. I liked em, but I think they use canned. I wanted to make it at home and all of the copy-cat recipes I found read "The longer you simmer the better they'll taste ", or something like that,:)
