Attached is the log for my current BRITU rib cook. I'm using the newest Stoker Wifi with my 18.5. WSM. I started with a chimney full of unlit charcoal and then put 25 lit coals on top. My water pan is empty and lined with foil. All lower vents are closed (except for the one that the stoker fan is attached to of course) and top vent is about 25% open. Notice how the temps seem to raise even faster when the fan goes out? Then it drops and the stoker turns on the fan intermittently expecting the temps to rise but they don't until the fan is left on continuously for a while. Any idea what's going on? TIA
