Suddenly find myself into deep frying

So it's a fault of mine - I'm cheap but I can't pass up a good clearance sale. I bought a turkey fryer last spring at HD on a clearance sale, and finally used it to cook a turkey this week. So far, so good, but cheap me realizes that I have a giant pot of gently used peanut oil that I just paid almost $40 for. I let it cool and settle, then carried it to my shower where I carefully poured most of it back into the container it came in.

So now I have expensive and relatively unlimited peanut oil slowing getting old on me.

I made french fries yesterday. I even upped my game and made better fries. I have to say that the peanut oil does work better than whatever random oil I had been using in the past. My kids will eat a whole bag of potatoes as fries if I let them.

Then I look at the pot on the stove and realize it only made one turkey and some fries.

So today it's onion rings. I cut some regular cooking onions up into neat slices and dunked them in GF pancake mix. This worked pretty good as well but was very filling and I only used a couple of onions.
