Stogie's Chili Verde -- gone chicken...

In another thread, Stogie (aka Kevin Taylor) posted a recipe for chili verde. I was intrigued, but only had a half-chicken leftover.

The resultant experiment was a hit, and I figured I'd post it here to see how others might improve it.

Green Chicken Chili (with thanks to Stogie!)

1 medium Onion, minced
3 cloves Garlic, chopped
2 tablespoons Olive oil

1 pound chicken, smoked and chopped (I used half a whole chicken, leg, thigh and breast)

2 pounds Green chilies, roasted, peeled, seeded and chopped (I used 1 lb Anaheim, 1 lb Chilaca)
2 tablespoons seeded, chopped Jalapeno pepper
1 teaspoon Cumin
1 teaspoon Salt
1 teaspoon Black pepper
3 cups Chicken stock
1 bottle Beer, dark

PREPARATION:
In a large dutch oven-type pot, saute garlic and onion in olive oil. Add chicken and mix until heated. Add remaining ingredients and bring to boil.

Simmer, partially covered, for about 2 hours. If you want more heat, add more Jalaps.

Serve over long grain rice (or maybe some sort of beans), garnish with diced onion, shredded cheese and additional jalapeno to taste.
