Steak Night and a new technique....

So, the only issue I've had with my Summit Kamado is steak night. I have to do a 45 minute cook to bake the potatoes and then sear up the steaks. Problem has been that I prefer to have the coals in the lower position to start them with the gas starter and to bake the potatoes. But, I want the coals in the upper position to sear the steaks.

I've actually done the tongs/gloves/coals/grate move after the potatoes are done but it's not a process I like or really want to do. But, tonight I figured out a really good way to handle it

I put the coal baskets in the bottom position to start them and did the potatoes for 45 minutes. Then I did a reverse sear with the steaks started in the upper position, then moved them to the side while I took the center grate insert from the main grate and placed it down right on top of the coal baskets and did the final sear on that. Worked flawlessly and solved my biggest and really only issue with my WSK.

Microwave pierced potatoes for 3 minutes a potato then put them on the grill, indirect heat to finish.

Keep coals in baskets, at the center circle for searing.

Cook steaks to 95-100° then remove the steaks.

Open rapid vent to get coals as hot as possible and sear steaks till 120-125° depending how you want them.

You’ll have perfectly cooked steaks with a nice crust. Just flip the steaks a few times in direct sear for evenness.

If you have a cooking grate from an 18” kettle or WSM, it sits nicely on the ring that holds the heat deflector plate. I can’t remember the last time I cooked with the coals in the upper position. If I need to get closer for a sear, I just pull the main cooking grate and drop an 18” cooking grate down closer to the coals.

It is something else you have to keep and store though, especially if you don’t already have one like I did.
 
I purchased a second " lower grate " ......the one the moves from the bottom to the mid for the charcoal......it was recommended by our Canadian friend out west and he linked me over to a site that was a different name brand. Works well and sounds like what you may need.

Yeah, so a second grate seems to be what I need. I have a Jumbo Joe so that grate should work. I feel like I need to probably get an official one from either Weber or someone that makes them.
