Smoked Split Pea Soup Recipe

I made split pea soup yesterday and yum.

2 cups onions
3 medium carrots
1/8 cup minced garlic
1/8 cup ground pepper
3 cups split peas
2 cups chopped celery
32 oz chicken broth
2 cups water
6 bay leaves
2 smoked ham hocks
2 cups cubed ham
1 cup smoked pork belly ends
1/2 cup chopped parsley
1 cup cubed potato
1 cup asparagus tips
salt/pepper as needed

#1 Use a paper plate to help remove debris from peas them soak in water. Rinse a few times.
#2 Add 2 tbs olive oil and mix all veggies in large pot until nicely wilted.
#3 Add minced garlic
#4 Add 1 cup of water and simmer another 5 or so minutes
#5 Add all the pork portions
#6 Add the chicken broth
#7 Add 2 cups of the rinsed and strained peas
#8 Add the other cup of water

Cook covered at a soft slow rolling boil for an hour and taste for salt requirement. Add just a bit.
Cook another hour check taste for salt need and add what you like.
Check water level it should be still extra watery.
Turn off heat.
Add the other cup of peas (cleaned and semi cooked) to the pot.
Cook uncovered until peas are soft and soup is thick to your liking.

This was my first attempt and it turned out great.
I watched several YouTube vids on this and “cherry picked” those as my starting point.
Split pea is a fun and easy cook.
I love salt but I am salt sensitive so I’m very careful not to triple salt.
Thats why I checked it for taste several times
I think what sets this recipe apart was my smoked pork belly and smoked ham hocks.

Good going Andy, perfect timing. DH has had a bag of split peas sitting on the counter for days now. He just can't seem to find the time to make the soup. Thank you for posting the recipe. Great job except for one small thing. Would you mind typing the title of the recipe at the top of the recipe? Need it when I print out the recipe.
