Soup and Salad Night


 
My Wife's Albondigas recipe.
Cook about a cup of rice.

Add half cup rice to a lb ground meat along with an egg, garlic powder, onion powder, salt and pepper, She didn't give me amounts on the spices.
Then make about ping pong size meatballs. Pack them pretty tight as the rice will still expand when put in the soup.

Saute a couple of carrots, 2 stalks celery, and half an onion.
Add a can of the small tomato sauce, then add four cups chicken broth
Add the meatballs and remaining rice to soup and cook till meatballs are done.
