Smoked Orange Ginger Salmon

3/4 to 1 pound salmon skin removed

1 cup orange juice
1-2 tbs soy sauce
1-2 tbs fresh grated ginger
1 teas hot sauce
2 tbs honey or maple syrup

Mix marinade. Add salmon to a zip lock bag
and add marinade. Put in fridge for 1/2to 1 hour.

Remove salmon from bag. Place salmon on WSM, smoke about 1- 1/1/2 hour on WSM about 200-225 degrees.

Tried this marinade a few weeks ago and it was great!! Going to smoke some salmon this evening using the same marinade. I can't wait!!
In the past I have always steered away from smoking fish on the smoky mountain for fear of the fish drying out. Was the fish still moist after an hour and a half?
