Smoked Cream Cheese


 
do i read correctly that your using BOTH the smoke tube AND pooping pellets at 225° cook temp?

do you use the smoked CC to use in another recipe or enjoy as it? i've cold smoked some other cheese concurrently when cold smoking salmon and the results have been great. my smoke tube (cold smoke generator) is the same as yours. and pellets work real well in those.
 
Yep. Have the pellet pooper set to 225 and it maintains that well, even with the smoke tube going. Wanted more smoke than the pooper will put out. Use this method for a lot of different cooks with good results.

Will be using some of it in bacon wrapped mini bells. The rest will probably be on snack crackers.
