I shot two beavers last week and of course i had to make something taste of them

Here is my son, helping me with the prep.

I let the legs soak in 10% salt solution for 4 days, and then it was time for smoking.

After 8 hours in 80 degrees celsius (175 F)! And it tastes great! Perfekt with a cold beer or in an sandwitch with som horseradish.

I have one project left that takes some time to prep.
A beaver gland drink, or as we say in sweden Bäverhojt!

Actually its really simple, i just put the beaver glands in vodka for 2 month. This is the
essence and you use it to flavour your shot

Puns aside, I have eaten beaver once, cooked for several hours, and stored in milk before that, and the taste was, er- "interresting".

Might as well be just as nice smoked.

The Beaver gland drink- I do not think so. It is a strong, repulsive smell, one of the strongest smells there is! It has been used by the perfume industry to keep perfume smells stay longer. So you say it's tasty? Your breath must smell like beaver for days!
 
Looks great. What was the taste like? I've heard its a bit rich and fishy.... Impressed by your son's help with the butchering, btw.

i really like reading about other cooks besides pork, chicken, etc. to me beaver, spam and such are exotic and interesting. i doubt i will ever come across beaver but wouldn't mind trying it. yers looks great.

Now that's really "getting your hands in it" excellent post. I'd definitely want to try some. The gland drink? You can have mine, why mess with perfectly good vodka
