I try to do a turkey every year for US Thanksgiving despite being in Canada as we love football and all traditions. Have occasionally resorted to chicken, but since this year I added a Performer kettle and WSM 18 to my arsenal I am leaning turkey again. It can also be a nice practice run for Christmas....
So...debating whether to SMOKE the bird or just roast/indirect grill her....thoughts? Never smoked a turkey before and not totally sure what to expect.
