Simple split pea soup

There's another split pea soup recipe on this forum, but this one is really simple & basic. I also like adding the smoked pork rind I have left over after doing a bacon in the WSM.

Saute a large, chopped onion is 2-3 T. EVOO. Rinse 1 lb. of green split peas. Add to the pot with the onion and add 8 c. water, 1-2 bay leaves and a ham hock. Bring to boil, then turn down to simmer. Add 1-2 diced carrots, black pepper to your taste and 1/2 tsp. thyme. Simmer 5-6 hours. Remove ham hock, chop meat and add back to pot. Check for salt and serve with hot bread/rolls.
