Salmon with Scallion-Ginger Sauce

Salmon with Scallion-Ginger Sauce

3 medium scallions, sliced thin crosswise
1 TB. minced ginger
Salt
4 salmon fillets (1 1/2 lbs.)
Ground white pepper
1 1/2 TB. peanut oil
2 tsp. oriental sesame oil

1. Mix scallion, ginger and 1 tsp. salt in a small bowl. Set aside. Sprinkle salmon fillets with 1/2 tsp. salt and 1/4 tsp. white pepper.
2. Bring 2 cups of water to simmer in a medium skillet Add salmon; cover and simmer 3 minutes. Remove from heat and let salmon rest in water, covered,, until outer layers of fish are opaque, about 8 minutes.
3. Transfer a salmon fillet to each dinner plate. Sprinkle each fillet with a portion of the scallion mixture. Heat oils in a small saucepan until just smoking , about 30 seconds. Immediately, drizzle some of this hoy oil over each salmon fillet. Serve immediately. Makes 4 servings
