rolled chicken breasts with bacon and chedder

Well I've never flattened and rolled boneless, skinless chicken breast's and stuffed them before. So I thought I'd give it a try. I put them in a plastic bag. Pounded them flat. Cooked some bacon in the micro till crisp. crumpled it up and added it on top of the chicken along with some shredded chedder cheese. Then I rolled it all up and held it together with toothpics. Then to help so the cheese would'nt all run out I wrapped one piece of raw bacon around the sides of the chicken. They held on with the toothpics that were already in the chicken.

I cooked them indirect over a chimney of full lit coals for about 50 minutes.

Man they were good! That's the first time I've done anything extra with chicken. All I've done in the past is grill and maybe throw some BBQ sauce on them.
I'll definetly do it again.

I'll have to try the Jumpin Jim recipe that Kevin Taylor uses for sure as well. That one sounds great!
