Removing the Wishbone Before Smoking

I've not heard of that before. It does seem like a bit of cutting before cooking, but it could be worth a try. As with most kitchen experiments, I don;t like to do that when I'm preparing a meal for company.

Perhaps give it a try on your next chicken.

In any case it's already too late for me this time. I'm already cooking our bird as we will celebrate today.

On a somewhat related note, I did watch Alton Brown carving a turkey a couple days ago (on TV.) He recommends removing the breast half in a single piece as much as possible, Then he slices the breast across the grain into smaller but thicker slices. I'm going to give that a shot this year.
