Randy Vasquez's Peruvian Potato Salad (with chicken)
1 TB. peanut oil
1/2 onion, chopped
1 clove garlic, chopped
1/2 cup roasted , unsalted, skinned peanuts
1/2 cup milk
1/3 cup crumbled ricotta salata
1 1/2 TB. peanut oil
1 fresh jalapeno pepper, seeded and quartered
1/2 tsp. salt
1/4 tsp. ground turmeric
1 1/2 lb. boiling potatoes, boiled, peeled and sliced into 1/2" rounds
1/3 lb. grilled chicken, diced
Heat oil in skillet. Add onion and garlic. Saute 5 min. Transfer to blender. Add remaining ingredients with exception of potatoes and chicken. Bend until smooth. On a serving platter, spoon sauce over potatoes. Top with chicken. Serves 6
