Since buying an offset smoker, my WSM 22 has felt a bit neglected. Well that's about to change.

Two, 8.5 lbs. pork shoulders lathered in mustard & sprinkled with Killer Hogs, The BBQ Rub.

Set the ATC for 225, with half dozen chunks of apple & cherry wood at 7:30 last night.

A labor of love, 20 hours later & I am ready to wrap & place in a cooler for 3 hours.

Shredded by hand, it was like buttah, very moist.

Dang…I want to curse but….. that is amazing….Im also a killer hogs fan.
I dare you to put Gringo Grande from killer hogs on your next juicy butt…….game changer.
10 out of 10 man…..we got sweet corn coming in….soon….about 6 weeks.
Vac pack the left overs into proper servings and it’s easily carnitas……….
